Berry Merry-ingue with berrycompote

— INGREDIENTS & SUPPLIES —

For 8 servings | 15 minutes preparation time and 120 minutes baketime

Ingrediënten
  • Egg whites from 4 large eggs
  • 300 g granulated sugar
  • 1 tsp vanilla extract
  • zest of half a lemon
  • pinch of salt
  • 400 g Beekers Berries soft fruit (we used strawberries, blueberries, raspberries and blackberries)
  • 40 g granulated sugar
  • 300 ml heavy cream
  • 1 tsp vanilla extract
  • 2 tbsp powedered sugar

Supplies
  • an oven
  • a baking sheet with parchment paper
  • a grater
  • a saucepan
  • a heat-resistant mixing bowl
  • two spoons
  • a hand mixer

 

Tip: Make the sauce and the meringue a few days in advance. That way, you’ll only spend a few minutes in the kitchen on Christmas 😉

— PREPARATION —

The Beekers Berries Sauce
  1. Prepare the sauce by heating the soft fruit together with sugar in a large saucepan until the berries release their juices and start to bubble.
  2. Stir constantly and crush large pieces of berries against the inside of the pan with the back of a spoon.
  3. Let it simmer gently for about 6-7 minutes until the berries form a thickened, syrupy sauce.
  4. Let it cool and store in the refrigerator.

 

The Merry-ingue
  1. Preheat the oven to 160°C/140°C fan/gas mark 3 and line a baking sheet with non-stick parchment paper.
  2. Make the meringue by placing the four egg whites in a large heat-resistant mixing bowl.
  3. Add the granulated sugar to the egg white mixture.
  4. Place the bowl over a pan of barely simmering water and beat with a hand mixer.
  5. Beat continuously, allowing the sugar to dissolve.
  6. Once the mixture feels slightly warm to the touch, remove the bowl from the heat and beat vigorously until you have a very smooth, stiff meringue – this takes about 5 minutes.
  7. Now, add lemon zest, vanilla extract, and a small pinch of salt, and mix again. Spoon the meringue onto the baking paper in a ring.
  8. Use a large spoon to create a shallow trench in the meringue where the cream and fruit can lie.
  9. Place the meringue in the oven and reduce the temperature to 120°C/100°C fan/gas mark 1.
  10. Bake for 2 hours, turn off the oven, and leave the door slightly ajar to let the meringues cool from the inside and become crispy on the outside. Store in a sealed container.

Decoration
  1. Whip the cream with the powdered sugar in a mixing bowl until stiff using a hand mixer.
  2. Cover the meringue with a bit of berry compote and whipped cream, then sprinkle some fresh soft fruit on top.
  3. Serve with a festive smile and enjoy!
