Summer salad with shrimps and raspberries

Imagine yourself in a summery atmosphere thanks to the delicious scents of lime and raspberries in this summer salad! In this salad we combine the prawns with garlic and chilli for a slightly spicy kick. It is of course extra tasty if you grill the shrimps on the BBQ, but you can also fry them in a (grill) pan.

You can make this summer salad in a few minutes, but because of the unique combination, this dish will be the showstopper at any BBQ. But you can of course also eat this fresh salad outside the summer season. For example as a meal with a freshly baked baguette or as a light starter during a Christmas menu. In fact, it’s always delicious! And this is how you make it:

 

— INGREDIENTS & SUPPLIES—

For 1 summer salad

 

For the salad
  • 200 grams of shrimp
  • 50 grams of Beekers Berries raspberries
  • 15 grams of washed spinach
  • 25 grams of alfalfa
  • 1 avocado
  • halve of a red onion

 

For the dressing
  • 1 minced garlic clove
  • 1 lime
  • 1 fresh chili pepper
  • 1 tablespoon of sesame oil
  • a handful of coriander
  • 1 tablespoon of soy sauce

 

Supplies
  • Knife
  • Cutting board
  • Mixing bowl
  • Spoon
  • Skewers
  • BBQ or (grill) pan

 

— METHOD —

 

Preparation

Step 1: Finely chop the chilli, remove the seeds and place in a large bowl.
Step 2: Then add the crushed garlic, finely chopped coriander, lime, soy sauce and sesame oil. Stir well and keep 20% of the dressing separately.
Step 3: Mix the fresh shrimps with the remaining mixture and let them marinate in the refrigerator for about 1 hour.

 

Preparation of the salad

Step 1: After an hour, put the shrimp on skewers and grill them for a few seconds on both sides.
Step 2: Drizzle the shrimp with the dressing from the bowl.
Step 3: Then you put the fresh spinach in a large bowl and mix the saved dressing through it.
Step 4: Spoon the spinach onto the plates and add the Beekers Berries raspberries.
Step 5: Also add the sliced avocado, red onion and of course the shrimp and sprinkle some alfafa over the whole to finish the summer salad.

Variation tip: this summer salad is also delicious as a filling for wraps. Grill the tortillas for 30 seconds on both sides, cover with the salad and roll up.
