Blueberry muffins without sugar

Sometimes we feel like baking something sweet, but our diet doesn’t allow us to eat loads of sugar. This recipe might just save the day! It contains no refined sugars and is made with whole-wheat flour to make it extra nutritious. Enjoy the natural sweetness of the baked blueberries that burst into these muffins!

 

— RECIPE & INGREDIENTS —

Makes 12

 

Beatter

1 egg
150 g flour
50 g whole-wheat flour
90 ml sunflower oil
75 g unsweetened aplesauce
100 ml Greek yogurt
100 ml milk
200 g Beekers Berries blueberries
2 tsp of cinnamon
1,5 tsp baking powder
1 tsp vanilla extract
Pinch of salt

12 paper muffin cups

 

— PREPARATION —

Batter

Step 1: Preheat the oven to 200°C.
Step 2: Place the paper muffin cups in a muffin tin.
Step 3: In a bowl, mix the dry ingredients (flour, whole-wheat flour, baking powder, cinnamon and a pinch of salt).
Step 4: In a separate bowl, whisk together the wet ingredient (sunflower oil, applesauce, yoghurt, milk, vanilla extract and egg).
Step 5: Combine the two mixtures and whisk until just combined.
Step 6: Add the Beekers Berries blueberries to the batter and fold them in.
Step 7: Divide the batter over the muffin tins and bake for 20 minutes until golden brown.
