Strawberry cheesecake

Ingredients & supplies

For 1 cake | 30 minutes preparation time

 

Ingredients
  • 200 g shortbread or Maria biscuits
  • 70 g butter
  • 12 gelatin sheets
  • 500 g full-fat quark
  • 250 ml unwhipped cream
  • 175 g white caster sugar
  • 2 punnets of Beekers Berries strawberries

 

Supplies
  • 1 whisk or mixer
  • 1 tablespoon
  • 1 food processor
  • 1 springform pan

Preparation

For the base
  1. Soak the gelatin sheets in cold water for about 5 minutes in a bowl.
  2. Meanwhile, crumble the biscuits and place them in another bowl.
  3. Melt the butter in a pan and add it to the biscuit crumbs.
  4. Mix well.
  5. Carefully spoon the mixture into the cake tin (about 24 cm) and press it evenly, for example with a tablespoon, until it is a nice even layer.

 

For the filling
  1. Remove the stems from 500 grams of strawberries and rinse them under the tap.
  2. Puree them with a food processor and place them in a pan to heat gently.
  3. Squeeze the gelatin sheets well, remove the pan from the heat, and stir in the gelatin.
  4. Let the mixture cool thoroughly.
  5. Meanwhile, stir the caster sugar and quark together.
  6. Whip the cream stiff in another bowl.
  7. Stir the strawberry mixture into the quark and then fold in the light, whipped cream.

 

For the strawberry cheesecake
  • Remove the springform pan from the fridge and spoon the mixture over the base. Spread it well and smooth it evenly.
  • Place the cake in the fridge and let it set for about 3 hours.
  • Then, you can start the finishing touch. Decorate the cake with Beekers Berries strawberries and any other soft fruit or decorations.
