Valentine’s cake with strawberries

Ingredients & supplies

For 8 servings | 90 minutes preparation time

 

Ingredients
  • 300 grams flour
  • 125 grams white caster sugar
  • Pinch of salt
  • 175 grams butter (cold)
  • 2 eggs
  • 2 tablespoons sugar
  • 500 grams Beekers Berries strawberries
  • 1 to 2 tablespoons water
  • 2 teaspoons cornstarch + 1 tablespoon water

 

Supplies
  • Knife or strawberry huller
  • Rolling pin
  • Heart-shaped cookie cutters

Preparation

Preparing the dough
  1. Put 1 egg, flour, caster sugar, and salt in a bowl and add the cold butter.
  2. Mix it in a food processor with a dough hook or knead the dough by hand (this naturally adds extra love).
  3. Form a nice dough ball and place it back in the bowl.
  4. Cover the dough with plastic wrap and put it in the refrigerator. Let it rest for at least 30 minutes.
  5. Meanwhile, preheat the oven to 175℃.

 

Making the strawberry compote
  1. We fill the Valentine’s cake with a delicious homemade strawberry compote. Wash the strawberries and remove the stems with a knife or strawberry huller. Tip: Set aside a few strawberries to use fresh on top of the cake for decoration. It’s best to wash these strawberries just before placing them on the cake.
  2. Put the strawberries in a saucepan, add the water, and set it on the stove. Keep stirring continuously.
  3. Take a small bowl and mix the cornstarch with a tablespoon of water.
  4. Once the strawberries have softened a bit, add the cornstarch mixture. Let the strawberry compote cook briefly so it can thicken!
  5. Remove the saucepan from the heat and let it cool completely!

 

Making the Valentine’s cake with strawberries
  1. Grease the cake pan, take the dough ball out of the refrigerator, and place it on the floured surface.
  2. Sprinkle some flour on the countertop and grab the rolling pin. Roll out the dough and line the cake pan with part of it.
  3. Pour the now-cooled strawberry compote into the pan and spread it evenly.
  4. Make a ball with the remaining dough and roll it out again (not too thin, or it will break).
  5. Now you can get creative! Use the heart-shaped cookie cutters to cut out hearts from the dough and place them on a separate baking sheet.
  6. Carefully place the dough with the cut-out hearts on top of the strawberry compote and gently press the edges.
  7. Separate the egg yolk from the remaining egg and brush it on top of the cake and the reserved hearts. Sprinkle the cake and hearts with sugar and place both baking sheets (the hearts under the cake) in the oven for about 30-35 minutes, until everything is golden brown. Decorate the Valentine’s cake with strawberries with the remaining hearts and let the cake cool completely before slicing.
