Strawberries with chocolate
Pink Monday, baby shower, gender reveal, or theme party? Actually, you don’t need any reason at all, because these pink Beekers Berries strawberries with chocolate will always make you happy! In this recipe, you’ll learn how we make this pink treat.
At Beekers Berries, we love to be inspired by the flavours and colours of nature. That’s why we made our own pink sugar for these strawberries with chocolate, using the natural color and flavours of our Beekers Berries raspberries. This way, you can make your own sugar decoration in no time, without artificial colouring! Gorgeous on these strawberries with chocolate, but also great on cupcakes or cake.
Ingredients & supplies
For 1 box of strawberries | 15 minutes preparation time
Ingredients
- 250 g Beekers Berries strawberries
- 200 g white chocolate
- 200 g ruby chocolate
- 50 g granulated sugar
- 1 Beekers Berries raspberry
- Optional extra sugar decorations
Supplies
- Paper cupcake liners or baking paper
- 1 saucepan
- 2 heatproof bowls or dishes
Preparation
Pink sugar
- Put the granulated sugar in a bowl and add one Beekers Berries raspberry.
- Mash the raspberry with the back of a spoon against the inside of the bowl to release the juice.
- Mix the sugar with this juice until it reaches the desired color. If necessary, you can repeat step 2 with an extra raspberry.
- Place the sugar on a piece of kitchen paper and dab it dry as much as possible between two pieces of paper. You can now remove the seeds and bits of raspberry.
- Ensure the sugar is spread out as much as possible on the paper so it can dry properly. Do not cover the sugar; let it air dry.
Decoration
- Break the chocolate bar into the smallest possible pieces. If you are using chocolate drops, specifically for baking, you can skip this step.
- Put each type of chocolate in a separate bowl. Bring a layer of water to a boil in the saucepan. Lower the heat and place the bowl on the pan so that the steam heats the bowl. This way (au bain-marie), the chocolate won’t get hotter than 100°C and won’t burn.
- Stir the chocolate until it is completely melted and do the same with the other bowl of chocolate.
- Pierce a Beekers Berries strawberry at the stem with a fork.
- Dip the strawberry in the chocolate and rotate it so that it is covered on all sides with a layer of chocolate.
- Remove the strawberry in a twisting motion from the chocolate and place it on a piece of baking paper or a paper cupcake liner.
- Decorate the strawberry with sugar decorations in the wet chocolate. You can also let the chocolate-covered strawberries harden in the refrigerator and then add stripes of the other chocolate as decoration. You can, of course, let your creativity run wild and go for other patterns or decorations. It’s entirely up to you!
- Let the chocolate-covered strawberries harden in the refrigerator for a nice crunch.

Ruby chocolate
You might not expect it, but the pink color in the ruby chocolate we use to decorate the strawberries with chocolate does not come from added colouring. The pink color naturally occurs in the cocoa beans from which the chocolate is made. So, it’s not white, milk, or dark chocolate, but a unique fourth kind. Ruby chocolate has not only a unique appearance but also a surprising taste, which is also naturally present in the chocolate. The flavor is reminiscent of white chocolate with raspberries, but you really have to taste it yourself. You can buy ruby chocolate at most baking stores, but sometimes also just in the supermarket in the baking section.
