Salmon with berry salsa

Ingredients
  • 4 salmon fillets (approximately 150-200g each)
  • 1 cup mixed Beekers Berries, diced (strawberries, blueberries, raspberries, and blackberries)
  • 1 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 jalapeño pepper, finely chopped (optional for some heat)
  • 2 limes • Fresh cilantro, finely chopped
  • Salt and pepper to taste
  • Olive oil

 

Supplies
  • 1 skillet or grill pan
  • 1 mixing bowl
  • 1 spoon
  • 1 cutting board
  • 1 knife
  • 1 fork
  • 4 plates for serving

 

— PREPARATION —

  1. Prepare the soft fruit, red onion, bell pepper, jalapeño, and cilantro as indicated above.
  2. Extract the juice from the limes.
  3. In the mixing bowl, combine the berries, red onion, bell pepper, jalapeño, fresh lime juice, and cilantro. Season with salt and pepper.
  4. Set the salsa aside to allow the flavors to meld.
  5. Heat the skillet or grill pan over medium-high heat and add a drizzle of olive oil.
  6. Season all sides of the four salmon fillets with salt and pepper.
  7. Place the salmon fillets skin-side down in the heated skillet or grill pan.
  8. Cook for about 4-5 minutes on each side, depending on thickness, until they are cooked through and easily flake with a fork.
  9. Remove the salmon from the heat and let it rest for a moment.
  10. Arrange the cooked salmon fillets on the four serving plates and spoon the salsa over the top.
  11. Garnish with additional finely chopped cilantro and a lime wedge.
