Salad with raspberries and shrimps

In this salad, we combine shrimps with garlic and chili for a lightly spicy kick. It’s especially delicious if you grill the shrimps on the BBQ, but you can also cook them in a (grill) pan.

This summery salad with raspberries and shrimps from Beekers Berries can be prepared in just a few minutes, but its unique combination will steal the show at any BBQ. However, you can enjoy this fresh salad outside the summer season too. For instance, as a meal with freshly baked bread or as a light appetizer during a Christmas menu. It’s simply delicious anytime!

Ingredients & supplies

Ingredients
  • 800 g shrimps
  • 200 g Beekers Berries raspberries
  • 600 g washed spinach
  • 100 g alfalfa
  • 4 avocados
  • 2 red onions
  • 4 cloves garlic, finely chopped
  • 4 limes
  • A bit of fresh chili pepper
  • 4 tbsp sesame oil
  • Handful of cilantro
  • 4 tbsp soy sauce

  • Skewers or BBQ skewers
  • BBQ or (grill) pan

Preparation

Preparation
  • Finely chop the chili pepper, remove the seeds, and place it in a large bowl.
  • Add the pressed garlic, chopped cilantro, lime juice, soy sauce, and sesame oil.
  • Mix thoroughly and set aside 20% of the dressing.
  • Marinate the fresh shrimps in the remaining mixture and let them rest in the refrigerator for about 1 hour.

 

Salad preparation
  • Thread the shrimps onto skewers after an hour and grill them on both sides for a few seconds.
  • Drizzle the shrimps with the reserved dressing from the bowl.
  • Add the fresh spinach to a large bowl and toss it with the reserved dressing.
  • Serve the spinach on plates and add Beekers Berries raspberries.
  • Also, add sliced avocado, red onion, and of course, the shrimp skewers.
  • Sprinkle the salad with alfalfa to complete the salad with raspberries and shrimps.

Variation tip: This salad with raspberries and shrimps is also delicious as a filling for wraps. Grill the tortillas on both sides for 30 seconds, fill them with the salad, and roll them up.
