Ingredients

0.5 lime

4 tsp cane sugar

62.5 g raspberries

2 sprigs fresh mint

500 ml sparkling water

Crushed ice

1 lime

8 tsp cane sugar

125 g raspberries

4 sprigs fresh mint

1 l sparkling water

Crushed ice

16 tsp cane sugar

250 g raspberries

8 sprigs fresh mint

2 l sparkling water

Method

  1. Cut the lime into slices.
  2. Divide the cane sugar and raspberries between the glasses. Use a muddler to crush the raspberries gently, releasing their juices.
  3. Add a few fresh mint leaves to each glass, followed by the lime slices.
  4. Use the muddler again to release the juice from the lime slices — but avoid muddling the mint directly, to prevent it from becoming too strong.
  5. Add crushed ice (or ice cubes) to the glasses and top up with sparkling water. Garnish the mojito mocktail with a mint leaf and a few fresh raspberries.
