Pasta salad Brin de Paille & strawberries
This summer pasta salad brimming with Brin de Paille & strawberries is easy to make and perfect to serve with a barbecue or as a quick meal. The French Brin de Paille cheese is a soft, white, rind covered cheese and makes the pasta deliciously creamy. Our vegetarian version below is delicious, but this pasta salad is also tasty with bacon lardons!
— INGREDIENTS —
Ingredients (serves 2 people):
1 punnet Beekers Berries strawberries
1 yellow pepper
160 g pasta
1 bag of rocket leaves
Brin de Paille cheese
pepper & salt to season
— RECIPE —
Take the strawberries out of the fridge and let them reach room temperature. Cook the pasta according to the pack instructions, wash the yellow pepper and cut it into small pieces/ slices. Cut the Brin de Paille in pieces as well. Wash the strawberries under a gentle stream of water, remove the calyx and chop them in half. Pour the pasta into a sieve, let it drain and put it back in the pan. Mix the Brin de Paille through the pasta until it melts and becomes creamy. Add the rocket salad and paprika and stir again. Season with a pinch of salt and pepper and garnish with parsley if desired. Spoon the pasta salad on the plates and decorate with the strawberries. Then simply sit back and enjoy!
