King’s Day tompouce with red fruit

This recipe combines crispy puff pastry with creamy pastry cream and the delightful sweetness of Beekers Berries strawberries and blueberries. Ingredients
- 8 pieces of ready-made puff pastry
- 250 ml whipping cream
- 1 packet of vanilla sugar
- Half recipe for pastry cream
- 1 punnet of Beekers Berries strawberries
- 1 punnet of Beekers Berries blueberries
Supplies
- 1 rolling pin (lightly floured)
- 1 fork
- 1 sheet of parchment paper
- 1 oven
- 1 piping bag
Preparation
Preparation
- Preheat the oven to the temperature indicated on the puff pastry packaging.
- Roll out the puff pastry in one direction on a floured work surface until it forms a rectangular sheet about 18 centimeters long/
- Slice each sheet of puff pastry into three equal rectangular pieces, resulting in pieces of 6 centimeters wide.
- Place the pieces on a baking sheet lined with parchment paper and prick them with a fork.
- Bake the puff pastry according to the instructions on the packaging until golden brown and crispy. Then let it cool on a wire rack.
- Whip the whipping cream together with the vanilla sugar until stiff peaks form.
- Prepare half of the recipe for the pastry cream.
Building
- Place on piece of puff pastry on a plate.
- Spread a layer pf pastry cream evenly over the puff pastry, leaving a small gap along the edges for the Beekers Berries blueberries.
- Arrange a row of blueberries against the pastry cream.
- Place a second piece of puff pastry on top and pipe a beautiful layer of whipped cream with a piping bag, covering the edges.
- Finish with a final piece of puff pastry and spread a thin layer of pastry cream on top. Arrange sliced strawberries in a tiled pattern on top.
