Healthy pancakes

Perfect pancakes are great for breakfast. Make these healthy pancakes in an instant and enjoy a delicious healthy start of the day!

 

— INGREDIENTS —

approximately 6 persons

Beekers Berries (of your choice)
1 ripe banana
2 tsp baking powder
1 tbs lemon juice
3 tbs (homemade) jam
100 g whole grain flower
80 g curd (or yogurt + extra for the topping)
80 ml oat milk
10 ml neutral oil

 

— RECIPE —

Mash the banana into a fine mixture in a bowl. Add the curd, oat milk, oil, and lemon juice. Sieve in the flour, add the baking powder and a pinch of salt. Mix it with a whisk until it is a smooth mixture.

Heat a pan with a little butter or oil and spoon portions of the mixture in it. Cook the pancakes on a low heat until they turn nicely golden-brown. Place the pancakes on a plate with some curd and decorate it with Beekers berries and optionally some icing sugar.
