— INGREDIENTS —

Baking utensils:
Springform(+/- 28cm)
aluminium foil
baking paper (optional)
sieve
rolling pin
pastry brush

Ingredients:
600 g Beekers Berries blackberries
1 package of vanilla sugar
150 g sugar (+ 1 extra tablespoon)
2 eggs
300 g flour
2 tbsp baking powder
pinch of salt
200 g butter (plus extra for greasing)

— RECIPE—

Preparation
Sieve the flour and baking powder in a mixing bowl and add one egg. Mix together, adding the sugar and salt. Cut the butter into pieces and add this to the mixture as well. Knead the mixture well to eventually make a nice dough ball out of it. Leave the dough ball in the bowl, seal it with foil and put it in the fridge to rest for about 20 minutes. Meanwhile, take the blackberries out of the fridge so that they can reach room temperature.

The pie

Heat the oven on 200°C and grab the springform pan. Grease the springform or use baking paper for the bottom and only grease the sides. Gently wash the blackberries and remove the dough ball from the fridge. Roll out 2/3 of the dough smoothly in a circle to fit in the springform. Then ease it into the springform and carefully press the sides. Now you can place the blackberries on the dough in the springform. Roll the remaining dough flat and cut nice, long strips and lay them over the blackberries as you like (we’ve put them over each other). Beat the remaining egg in a bowl and brush the dough on top of the pie so it will go golden in the oven. Lastly, sprinkle the pie with a bit of sugar and put it in the oven for about 30 minutes.

Enjoy this delicious, classic blackberry pie!
