Blueberry lemon cake recipe

For 1 cake | 30 minutes preparation time & 60 minutes baking time

 

Ingredients
  • 2 handful of Beekers Berries blueberries
  • 180 g flour
  • 1 packet baking powder
  • 75 g melted butter
  • 200 g granulated sugar
  • 2 eggs
  • 1 packet vanilla sugar
  • 1 lemon
  • 100 ml milk
  • Pinch of salt
  • 125 g powdered sugar (juice from the remaining half of the lemon)

 

Supplies
  • 1 mixer

Preparation

  1. Preheat the oven to 160ºC (320ºF).
  2. Grease the cake pan with butter.
  3. Wash and zest the lemon.
  4. Cut the lemon in half and squeeze the juice from half.
  5. Wash the Beekers Berries blueberries and place them in a bowl with flour. Coat the blueberries with a thin layer of flour.
  6. Remove the blueberries from the flour and set them aside.
  7. Add baking powder and salt to the flour in the bowl and mix together.
  8. In a separate bowl, mix melted butter, sugar, eggs, lemon zest and juice, and vanilla sugar.
  9. Add the flour mixture and milk, in two separate additions, mixing each addition gently into the batter before adding more.
  10. Fold the flour-coated blueberries into the batter.
  11. Bake for approximately 1 hour in the cake pan, or until a toothpick inserted into the cake comes out clean.
  12. Place powdered sugar in a bowl.
  13. While mixing, gradually add lemon juice from the remaining half of the lemon until you reach the desired consistency.
  14. Pour the glaze over the cooled cake and garnish with fresh Beekers Berries blueberries.
